A delicious mix of crunchy, fruity, sweet and savory goodness.
Ingredients:
| Dressing | |
| 1 (6 oz) container | Rachel's™ Pomegranate Açai yogurt |
| 2 tbsp | milk |
| 1 tbsp | cider vinegar |
| 1 tbsp | poppy seeds |
| salt and pepper to taste | |
| Salad | |
| 3 cups | baby spinach |
| 1 pint | fresh blackberries |
| 1/2 cup | walnuts, toasted |
| 6 oz | crumbled feta cheese |
| 1/2 | small red onion, thinly sliced |
Method:
In a small bowl, whisk together Rachel’s yogurt, milk, cider vinegar, poppy seeds, salt and pepper.
Rinse and dry spinach and blackberries. In a large salad bowl, gently toss dressing with spinach. Sprinkle with blackberries, walnuts, feta cheese and red onion. Serve immediately.
