Peach Green Tea Crème Brûlée with Peaches

A shortcut to the classic dessert. Simple to make and simply scrumptious.

Ingredients:

4 (6 oz) containers Rachel's™ Peach Green Tea yogurt, strained
1 (12-oz) package frozen sliced peaches or two large fresh peaches
1/4 cup granulated sugar
1/4 cup demerara sugar (Sugar in the Raw)

Method:

To strain yogurt, pour yogurt into a strainer that has been lined with a coffee filter, paper towel or cheesecloth and then placed over a bowl. Refrigerate 8 hours or overnight. Much of the whey will drain from the yogurt, leaving behind a rich, creamy and flavorful concentrated yogurt.

Begin by caramelizing peaches. Preheat broiler. Toss peaches with sugar and arrange on a baking sheet and place under preheated broiler for 7-10 minutes until sugar is brown and bubbly. Set aside to cool.

Smoothly spread strained yogurt in 4 ramekins or shallow bowls set on a baking sheet. Sprinkle tops evenly with demerara sugar. Place baking sheet under broiler and broil for 5-7 minutes until sugar is brown and bubbly. Alternately, use a torch to brûlée sugar until brown and bubbly.
