A beautiful, deep pink mousse that captures the luscious flavor of pomegranates.
Ingredients:
| 2/3 cup | pomegranate juice |
| 1 package | unflavored gelatin (2-1/4 tsp) |
| 1-1/2 cups | heavy whipping cream, divided |
| 1/3 cup | granulated sugar |
| 1/4 tsp | salt |
| 5 (6-oz) containers | Rachel's™ Pomegranate Açai yogurt |
| pomegranate seeds for garnish |
Method:
Pour pomegranate juice into a small bowl. Sprinkle gelatin over juice, and let sit for 4-5 minutes.
In a small saucepan combine ½ cup cream, sugar and salt. Bring to a simmer. Remove from heat and whisk in juice and gelatin. Pour mixture into a large bowl. Slowly whisk in Rachel’s pomegranate açai yogurt. Cover with plastic wrap and refrigerate for 25-30 minutes.
Whip remaining cream until soft peaks appear. Fold 1/3 of the cream into chilled yogurt mixture until well incorporated. Gently fold in remaining whipped cream. Spoon mousse into champagne glasses and refrigerate for a minimum of 2 hours.
Garnish with pomegranate seeds and serve.
